Raspberry Ripple Voyage Cake
I like the balance of texture and colour — refined, slightly playful and very moreish.
Made without any artificial colours of flavours, this cake needs no introduction. The Raspberry Ripple was my late grandmother's favourite ice cream flavour and I created this cake to be reminded of her legacy–her homesteadness, her wit, her strength and the joy of simple pleasures. JOY is the right word for this cake, oozing on some parts with our housemade berry jam and drizzled in a pink-tinted lemon drizzle. I feel like such a genius for coming up with this cake, but in reality I can't even hold a candle to the inspiration behind it. Thank you grandma, I miss you.
