I am slightly obsessed with pistachios. I sometimes wonder why they’re green and why are they great in gelato and sometimes I wonder why they’re so expensive. Why? Why? Why?
They’re so good for you and they should be available for everybody more affordable. But you gotta pay for good stuff and pistachios are the good stuff and I truly believe in pistachio, therefore, I will continue to eat and bake and cook with pistachios on a regular basis. This cake here is an example of one afternoon of fooling around with pistachios. And the results always speak for themselves, burnt pockets notwithstanding.
