Mel's Notes
It took me a while to finally decide to serve cuisine from my Padang heritage. To be precise it took me a nice and long 5 years to finally have the confidence to serve these long-cherished, family recipes to my customers. To me, Padang food is very complex and so nuanced, and the thought of scaling it for business terrifies me still. My great grandfather, an immigrant from Padang, Sumatra made a life here in Singapore. Above his Padang restaurant, situated in a shophouse on Arab Street, was a lodging house for newly-arrived Sumatrans to stay in, while they found their footing in our beloved island. The restaurant is long gone, but the flavours flow through my veins still.
