Matcha Lychee Sponge
I have a soft spot for flavour combinations that shouldn't work on paper and then absolutely do.
Matcha and lychee is one of those. The grassy depth of our Kyoto-sourced matcha, the soft floral perfume of the lychee.... They meet in the middle somewhere and produce something that feels completely effortless. Light sponge, beautiful flavour, and a look that genuinely turns heads on any dessert table.
All I can say is that this is my newest favourite celebration cake in All Things Delicious. And that says a lot.
