Heartwarming combination of lemons and rosemary.

Made with a wonderfully fruity, Spanish olive oil, this is the tea-time cake of Mediterranean dreams. It has a wonderful pudding-like texture from the semolina, a sweet lemony scent and the subtle evergreen woodiness from rosemary. Take us to the riviera, to the sun-kissed citrus orchards and row upon row of olive groves. What can we do but dream during this pandemic?

Not-so-sweet and just nice is the common comment we get about this cake. If you'd like something different, this is the cake for you. It's got a great texture, thanks to the addition of semolina. And you'd love the scent of rosemary, freshly chopped and added into the batter.
