I adore banana cake and there are so many variations growing up. One of my favourite snacks that grandma used to make is the jemput-jemput pisang – a sweet, soft banana batter that gets dropped into hot oil which instantly caramelises the sugar and bananas. For this cake, sugar is first caramelised and then added to the banana slices before baking. It’s intense, alright. I would give this cake a 9.5 out of 10 but that’s only because I am being modest!
