Trivia for you: even though the Americans claim to have "invented" the carrot cake in the early 20th century, carrot puddings were probably enjoyed way back in medieval Europe. Cake, as we know it was not invented yet. Carrots appeared in 10th century Arabian sweet recipes, quite similar to the Carrot Halwa served in the Indian sub-continent and region.
