These tarts are hands-down the best you can find anywhere! Let’s first talk about the biscuit base. The pastry chefs make these every single day in our kitchen. (They also make creams, ganache, scones and cakes on a daily basis, but that’s beside the point)
Someone will make the dough, chill the dough, roll the dough, cut the dough, mould the dough, chill the dough again and then bake the dough.
There will be another set of people who will make the different breath-taking fillings that go into the biscuit tart base. There’s the mascarpone whipped cream, there’s the lemon curd, there’s sea salt caramel, there’s chocolate raspberry ganache, there’s the glossy chocolate glaze, there’s the meringue for torching, fruit for slicing and glazing. This fruit tart is made in a facility that also handles dairy, peanuts, sesame, shellfish, soy and other tree nuts.
The Fruit Tart is best served on the day of purchase. Keep them chilled.
