The Earl Grey tea is so beloved and it is unsurprisingly the number one selling tea in our cafe, surpassing English Breakfast and Green Tea. Translating the flavour into a cake though took me quite some time in the R&D office (er, my kitchen) until I found the most spectacular earl grey tea I could lay my hands on. Everyone in the ATD kitchen treats these dried leaves with bergamot oil as a precious commodity because there is something extremely special about the Earl Grey tea, don’t you agree? It has the ability to transport you to far away, exotic places with one sip.
