Lemon sponges made with freshly-grated lemon zest are glued together with lemon curd. If you know me, you would know that I love anything lemon-y and our housemade lemon curd is simply divine! The whole thing gets completely covered in a light meringue dusted with snow-white desiccated coconut. Because when life gives you lemons, you get cake. You’re welcome.

  • From the outside, this is simply a white cake. Like the dress of a bride, like the clouds up in the sky, the colour white has long been associated with purity, simplicity.
    For this cake, we made a pure white cake cover in the formed of whipped egg whites to form a white in its purest form - something we could never achieve with buttercream. Coconut is the other white that I eternally love so what better than to dust the meringue with fragrant desiccated coconut. White on white. Underneath the white are fluffy sponge cakes with layers of our house-made lemon curd. I love a good lemon curd and putting them in between layers of cake is the most natural thing to do. The sweet meringue on the outside perfectly balances the lemons on the inside resulting in a beautiful and unforgettable cake experience.
    This cake makes a gorgeous birthday cake with its simple (but bold), modern and pure design. I am sure you can think of someone in your life this cake is perfect for.

  • Keep the Coconut & Lemon Meringue Cake chilled and remove from fridge 30 minutes before serving. The cake is best served at room temperature. This cake keeps fresh for up to 2 days in the fridge. Store leftover cake in air-tight containers for up to two days in the fridge.
