I adore banana cake and there are so many variations growing up. One of my favourite snacks that grandma used to make is the jemput-jemputpisang – a sweet, soft banana batter that gets dropped into hot oil which instantly caramelises the sugar and bananas. For this cake, dark brown sugar is used that caramelises beautifully with the bananas for the most intense explosion of flavours. I would give this cake a 9 out of 10 but that’s only because I am being modest!
